Risotto A Go Go

So I didn't eat lunch today, breakfast was really late and then I was really busy. That also meant I went to the grocery store hungry, which usually isn't a good thing but I think I maintained my composer and didn't buy anything to bad. I did pick up some cookies a couple of time but I put them back.


I rescued these guys from the wind. Some of the sunflowers out front were toppled over :(
I picked these guys up and gave them some water (yes that is an old wine bottle. Reduce Reuse Recycle, right?)

The husband as been asking for risotto for like 2 weeks and I finally got more aborio rice at the grocery store today. So guess what we had for dinner?
That's right! Pudding pie. . . err. . . I mean risotto!



The complete meal. I made some zucchini it was meh (I think I am just really sick of that vegetable its exciting at the beginning of the summer but I am ready for it to stop growing).
A baked chicken breast with some spices (salt, pepper, paprika, rosemary and cumin).
Risotto (of course), look out for a risotto how to post.
And more corn from the inlaws.


And to drink I made myself a mocktail (sparkling water and pomegranate juice)


Now I am off to go climbing with Leah.

I got 2 scrambled eggs with wheat toast and homefries.

And the onions that Josh didn't want on his steak, on the side.

It was good as always.

Side note, I am very disappointed.
So while we were waiting for breakfast I decided to see if there was an app for my phone that I could blog from and there was. There was the lite version and the $$ version. I downloaded the free one, but I couldn't upload photos. After some debate I decided to try out the $$ because it was only 1.99 and I figured it would be fun to update the blog on the go.
I am annoyed because the $$ version only lets you upload 1 photo. that seems silly. Whats the point. So I feel like i have just wasted $2 and that annoys me!
So I am trying to figure a couple of things out inside of blogger. The main thing is being able to reply to comments. I think it would be really nice if I could reply to each comment separately but I can't quite figure out how to do it or if blogger even lets me do it. I am looking at word press, also, to see if they do, so I might switch over.
I am really enjoying blogging and I hope you are all enjoying reading my posts. I want to make this fun for both me (the blogger) and you (the reader).

Anyway on to the food!
For lunch I had a almond butter and strawberry jelly sandwich on a pita pocket. I had chips and salsa on the side.

I pretended that salsa is a veggie, mostly because I was short on time and didn't really want to cook anything. It was a satisfying meal.
I brought some snacks to munch on while at work.

A clif bar. I think clif bars are my favorite of any energy bar, I have only tried 3 kinds of energy bars (odwalla, larabar, and clif bars) but these are my favorite hands down.

I also brought fruit to work, my lunch was lacking in the fresh department so I had to make up for it.
Okay so what do you guys thing: Worlds smallest apple or largest strawberry?

This is the fruit that I brought. An apple, some strawberries and some blueberries.


So lets talk for a minute about my job, the food there is not good for anybody to eat. It is delicious food but not healthy, at all, everything is either covered in oil (deep fried) or loaded with salt (hot dogs). We also have ice cream, I ♥ ice cream (and cheese but that's a different post). It is very hard for me to not eat the ice cream at work, we have like 20 flavors. I mean it is a constant struggle, I have tried bribing myself, i.e. okay I won't eat ice cream all week and if I am good I will let myself have some on Friday, but then I just go waaaay overboard with the ice cream and give myself a stomach ache.

Then one day I brought in some strawberries and blueberries. I used them to make this and while it isn't ice cream its enough to satisfy me on the ice cream issue. And its way healthier (at least I think it is).It's a fruit and whipped cream parfait. All I do is layer strawberries, blueberries, and whipped cream in a cup. It's sweet and cold and totally hits the spot! I added sprinkles to make it look festive and fun.

After all my snacks were gone but while I was stil at work I started getting really hungry and couldn't wait until I could get home and make some dinner. I just hate how late I have to eat (9pm), but I do love how much healthier and satisfying the dinners I can make at home are verses the ones at work.

Dinner required a trip to the garden. It was dark and rainy but I still got a quick shot for you guys.
Its my kale (the tall thing in front is a sunflower). I used one of the little kale bushes (not really a bush but I don't know what else to call it) to help make dinner. There are 3 in this photo it's just hard to see one of them.

Dinner! Kale and Chickpeas sauteed together, brown rice and tofu. I had a mix of really hot sauce and ketchup for dipping everything in.

And to drink:
Pumpkin Beer!! It's the most wonderful time of beer!
And even better this particular pumpkin ale is made by my favorite brewery, so it's my favorite kind of beer made by my favorite brewery. The Husband picked me up a 6 pack the other day when we had make your own pizza and this is the last one. Did I mention I ♥ my Husband!

2.5 miles

So I got up this morning and the day looked like this . . .
Gray and dark and kind of rainy. Not so good when you are trying to get out of bed. But not a bad day for a run.

But before my run I had to eat breakfast. I woke up starving, which is wierd because dinner last night was at 9pm, you think I wouldn't be that hungry.

Per usual I had coffee but I added a glass of water as well, I just needed it.

And some delicious oats, Kath Style.
In the Pot:
2/3 cup almond milk
2/3 cup water
1 banana
teaspoon Chia seeds
2/3 cup oats
Sprinkle of cinnamon

On top:
Almond butter

After I was done with breakfast I sadly remembered we had fruit in the fridge, maybe tomorrow it will make an appearance.

After blogging and reading and eating it was time for a nice cool run.


The middle row is the temp "CH'' is outside "IN" is inside. Notice the frowny face next to the outside temp, even my fancy weather station isn't happy with this kind of weather in August.

I don't really mind it made for nice running weather. I also had an anchor a running partner today.
It was Tega! My puppy dog, he is kind of lazy though. After about a mile he starts to drag which does make my run harder but he needs exercise too.


Okay so that is really small here is what it says, or the important parts any way

I want to go faster but I did run the whole thing so that's pretty good.

Nom Nom Nom

Hello!
So Saturday night the Husband and I went to a rock show to see the Thrift Syndicate play a reunion show. It was fun but I stayed up waaaay past my bed time and because of that I also got up way later than I had wanted to.

When I rolled out of bed at 8:30 coffee was a must!

Along with a bowl of oatmeal.
The way I make oatmeal is not the instant kind, its made on the stove.

To the pot I add:
1/3 cup water
1/3 cup Almond milk (or whatever milk I have in the house, lately it's been almond milk)
1/2 a banana
1/3 cup of oats
some chia seeds
a sprinkle of cinnamon at the end.

And then on top I added . . .
Dark Chocolate Almond Spread. Soooo Good, I am almost out of this which means I need to find more.

While I made and quickly ate my breakfast I made a lunch to bring to work.
Salad with lettuce, spinach, corn, cucumbers, orange pepper, olives and dried cranberries.
It was good but I always feel like salad is missing something and can never quite figure out what it is. :-/

And on the side I brought some left over squash and eggplant from the make your own pizza the night before.

The Husband got ingredients for dinner while I was at work.Corn from his parents (it was really good, I love corn in the summer time)
Some Salmon from the grocery store (baked in the oven for 15 mins (should have been less it was a little dry) with salt, pepper, olive oil and red peppers)
Garlic bread also from Stop and Shop.

And to drink with dinner . . .
A nice small glass of red wine. It was left over from the night before, that is all that was left in the bottom. It was just enough.

Now I am off to start my day, I have a run planned, maybe some cleaning and I have to go to work at 2.

Okay this is going to be a quick blog, I got up way later than I wanted and then the pictures took forever to upload. Please don't mind the photos, they are straight from my camera.

So yesterday started with a walk with my dog and then it was time for breakfast.


I made the husband and I smoothies and coffee (not pictured).

This was my havest from my garden yesturday. 2 zucchini (so much zucchini this year, so much), 3 acorn squash, a bunch of hot peppers, and some beet greens. Yum!

Around noon I was hungry so I had a snack lunch; Clif bar and an apple

Around 2 my best friend and I set out for a kayaking adventure, but first we stopped to get a quick bite. I got a grilled cheese, she got a lobster roll.

Kayaking spot one, with best friend Leah. we made it here about 5 minutes before we discovered the river was way to sallow.

Kayaking spot 2. Much better location. So pretty and peaceful, we kayaked for about an hour, it was great!

Then for dinner we had a bunch of friends over and did make your own pizza. So I am still getting use to photographing my food and forgot to get a picture of my pizza before it went in the oven and also after it came out but before I ate it. I was hungry and excited.

Everyone waiting for pizza to be done.Everyone after pizza was consumed. Yeah we kind of ate a lot. How many people can you find in this photo? How many Dogs?

This is the pizza aftermath, everyone made 2 mini pizzas. Almost everyone ate 2 mini pizzas. I had a piece and a half left. :-/ It was just too good to stop.

And because we totally didn't eat enough pizza we then had a small piece of cake and some wine.

Now I am off with just enough time to have breakfast, get changed, and go to work.

Hi! And welcome to my Blog

This is my first Post, but not my first blog. I am trying this blog thing again, I started one once but never really updated it.
My goal for this blog is to update it at least once a day, I am sure there will be a few days I skip, but I will do my best to update it as much as I can find time to do.
So a little about me. I have decided to try blogging again because I have been reading a lot of blogs and they have inspired me. I made a rule for myself, until I get into a rhythm of blogging everyday. The rule is I am not going to allow myself to read any of the blogs I read almost everyday until I have updated my own blog. I figure I have the time to read blogs so why shouldn't I have time to update one.

My blog is going to be about me (obviously), but me through what I eat and how I exercise. I named my blog Eat. Run. Garden. because I love to eat and cook, I like to run, and I try to grow my own food in the summer time in my Garden. I am a 25 year old women, I have a husband, a dog, a cat and a house. I am in the process of switching careers. My "career" right now is manager at a burger and fry place (that makes it hard to eat healthy all of the time), I tried photography for a while but finding the time to grow my career and make money to support that growing career didn't work out so well for me. Hopefully I will soon become an elementary school teacher, I am starting classes in September!

A little about this blog!

On Eating:
I love to cook and I love to eat, I was a vegetarian for 7 years until I started to eat chicken again and very, very recently I have started eating some beef, but I will only eat grass feed locally grown beef and not very often. Meat still kind of grosses me out so I still usually chose the vegetarian options if there is one.
I try as much as possible to eat locally and seasonally but I wouldn't consider myself a "locavore" or anything. I try to eat healthy but I will almost always try anything once.
There is one food I do not like: I do hate cilantro, I can't stand the taste. I don't know what it is but to me cilantro tastes like dirty soap, which is one reason I find this site quite funny.


On Running:
Freshman year of college I started running and I liked it, I was running 2.5 miles a day by mid summer. Then school started back up and a combination of being bored with running (I wasn't pushing myself and I set no new goals once I reached 2.5 miles) and become really busy with school and work (I was taking 6 or 7 classes and working 20 or more hours a week) lead me to stop running. I would, every once in a while, try to go out for a run. By "every once in a while" I mean once every couple of weeks which meant that I couldn't run as far as I use to be able to and I would get frustrated. It wasn't as fun as it use to be. Because I pretty much stopped excising but kept eating the same I started to gain weight. I gained 35 pounds! in about 4 years, so it was a slow gain but it was still a big gain.
Last July (July 2009) I decided to do something about it, I started running again and I joined Calorie King. I have lost 25lbs and I am started to run 5k's. I feel so much better, I would like to lose another 10-15lbs but I am sure that will happen as long as I can try and continue to eat healthy and excise.
I have started making running goals for myself and I enjoy running again! Right now I can run 3 miles at about a 10:30/mi pace. I have 2 goals for myself I want to run a 5k in under 30 mins (my PR as of right now is 31:26 <-- I did that hungover too!) and I want to I am going to run the New Bedford 1/2 marathon in March. I know I can accomplish both of these goals while having fun.
My next 5k is on September 12th! I can't wait, it is the same course I ran for my first 5k.


On Gardening:
In 2008 my husband and I bought a house (we weren't married yet but we are now), that summer I had a small, small garden: 1 zucchini plant, 2 tomatoes, and a basil plant. The next year I made the garden way bigger and it was great, I had lettuce and herbs and zucchinis, carrots, tomatoes, 1 green pepper, kale, raspberries and more! It was great, I also started a gardening blog which I updated about 6 times.
This year I still had the same size garden but I had way less time to garden, I was working 45+ hours, I was planning a wedding and I was trying to run 10-15 miles a week so I still have some stuff just not nearly as much as last year. I try to eat from my garden first, then find locally grow food and then go to the grocery store, this is why I am including my garden in my blog.
